Rustic Vegetable Soup

My Rustic Vegetable Soup is a celebration of seasonal British produce, lovingly prepared the traditional way. I start by slowly sweating a colourful medley of chunky, hand-cut vegetables until they release their natural sweetness, whilst fresh herbs impart their subtle fragrance throughout. The beauty of this soup lies in its honest simplicity - letting the vegetables speak for themselves whilst creating that wholesome, homemade taste that warms you from within. Perfect on its own or with a chunk of crusty bread to mop up every last drop of goodness.

Meet Giovanna

I have loved cooking since a young age. Once, my sister asked me to fry her an egg, I was anxious as I had never cooked before. When I fried the egg perfectly I fell in love with cooking. Since then I started taking cooking lessons, including in secondary school. I studied professional cookery at Merton College and I am currently studying nutrition and food management at West London University.

Healthy and tasty

Healthy and tasty, felt wholesome and packed with nutrients without being boring. Because the vegetables were chunky, it felt like a light main course stew which worked well for me. I would like to see this chef do other vegetarian stews/soups, for variety.

Pleasant soup

I liked the mix of textures from the different vegetables. Flavour not very interesting. Added diced ham to make a light meal and the saltiness of the ham made it more tasty.

I did not like the texture of the soup as the cabbage made it feel grainy. I don’t feel that the vegetables were varied enough and lacked taste.

Lots of chunky veg, but low on flavour

I loved how much veg there was in this soup, and it all managed to keep a great fresh crisp texture despite being frozen and reheated. I liked that there was a good variety of veggies too. However, the broth itself was lacking in flavour - a hint of sourness but not much else there. Texture - fantastic, but flavour - needs work. Sorry!
