Meet Pessima

FireBirds Woodfire BBQ Chicken

I was born in Sierra Leone (West Africa) but grew up in the U.K. My mum is a chef, and my dad taught me how to season and cook meat. I create meals by fusing ingredients from Africa, the Caribbean, and southern America to create unique meals busting with vibrant fresh ingredients and high-quality perfectly cooked meat. I put my own twist on popular traditional meals from each region to give customers a full food tour of Afro-fusion cuisine.

A delightful meal that requires better quality control

This is a wonderfully flavoursome meal. I have not eaten any West African food before, but that will change now, having sampled two of this Chef's offerings now. Highly recommended with one caveat - with most dishes there were remains of woody herbs used in the cooking and not removed. This detracts for an excellent meal and needs to be corrected before general release. I have shown a picture of the woody pieces as well as the lovely dish itself.

Flavoursome

Really tasty sauce and caramelised chunky vegetables. Sadly a lot of fatty beef in this portion otherwise would have been perfect.

This was very tasty and would definitely buy again. The beef just melted in the mouth and the vegetables were well cooked all in a rich gravy.

Very tasty

Loved the caramelised potato, carrots and mushrooms. Beef very tender and thick tasty sauce. Added a little more veg and not sure that I would purchase this at full price.
