Butternut Squash & Peanut Soup

My Butternut Squash Peanut Soup is a proper autumnal treat, if I do say so myself. I start by roasting chunks of butternut squash until they're lovely and caramelised, bringing out their natural sweetness. Then, I blend them with a rich vegetable stock and a dollop of creamy peanut butter - it's a bit unusual, but trust me, it works a treat! A touch of ginger and a pinch of chilli flakes give it a gentle warmth, while a swirl of coconut milk adds a silky finish. It's proper comforting, this soup - like a warm hug in a bowl. I like to top it with a sprinkle of roasted peanuts and fresh coriander for a bit of crunch and colour. It's just the ticket for those nippy autumn evenings!
