Meet Lilia

Lilia's Kitchen

In Madagascar, cooking is a time for family, especially with grandma and grandpa. We cook together rather than relying on the elders of the family to do it on their own. We are taught by our grandma, reminding us it was her mother who taught her and that this is how the tradition of Malagasy dishes stay alive. It's an incredible bonding experience that passes on recipes and techniques for generations to come.

My speciality is Madagascan Cuisine

What is your favourite dish to eat and why?

I love to eat Lasary, easy to cook and yet very flavorful. I can eat it in a baguette, with rice, on it own, and I don't have to worry about calories as it is a healthy food.
This dish brings me back to my childhood, our dinner with my family where we love to talk, laugh and enjoy eachother's company.

What is your favourite dish to cook and why?

I love to cook the traditional Lasary as it is a simple dish but with so much flavour. A dish that can be eaten on it own or accompanied by any other dishes, rice, chicken, poha,soups and so on. Such versatile dish and so tasty. Cooking Lasary is simple and it doesn't require so many ingredients, it is really healthy and it brings that simple cooking to another level.

What is your proudest cooking memory?

The very first time I cooked Madagascan food on my stall here in the UK I was wondering how would this be received and I was truly happy and proud of how it was received, having my customers coming back again and again and truly appreciate my Madagascan food was a great feeling. Cooking is my passion and I love it most when people enjoy it.
