Mini Virginia Cake

We came up with this recipe when our friend, Virginia, was on a strict diet, hence the cake is sugar free, dairy free, gluten free as well as vegan. The cake was sold out in the first month, so we named it after Virginia. Its sweetness comes from dates and it has a nutty base filled with pistachios, cashews, almonds, and oats.

Meet Bora & Jenny
Mind the Cake

We have been best friends for 8 years and flatmates for 7 years, and the kitchen has been a major space of bonding for us. Bora is a trained pastry chef and the founder of her own social cake shop in Kosovo, and I (Jenny) am the devoted student. During the pandemic, I was suffering from severe eczema so I was on a strict refined sugar free, seed oil free diet. But I wasn't ready to give up cakes. That got Bora and I experimenting. We replaced the sugar and milk in her French and Italian recipes without compromising the taste. Et voilà, Mind the Cake was born in 2024.

Had this desert again but sadly a rather small portion

My Review

It has a lovely presentation to look at and a very mild and mellow taste,I thought it is amazing that the cream is made up mainly of nuts and it has a hint of Apple as well, If the taste could be stronger I think it would be really lovely.

Tasteless

Ive never tried vegan & I wasn’t overly impressed due to the colour of the cake - it looked dull & insipid , also it was very tiny portion (half the size of a standard take knife)
the “cake” has more of a mousse texture unfortunately my first mouthful was tasteless, so I tried another from the other side - it was the same - bland with zero taste hint I couldn’t identify. any taste in it.
as a nut fan your base is by far a better texture & nutty taste with hints of cashews& pistachios. . I can’t say how a vegan would describe the cake but for a”standard “ eater . it’s a point for the base only

My kind of cake

Really liked this. I am not a great desert fan as most are far too sweet for me. I do love nuts and plenty in this treat. Great to see that a lot of thought has gone into this desert serving for those with dietary needs. I am fortunate not to have to look all the time for specific dietary requirements but well done on this dish
