Our raspberry cheesecake is rich in protein and has creamy flavour with a slightly sweet taste. This is one of the first recipes I learned in pastry training in Turin and we hope you enjoy it as much as we do.

Mind the Cake

We have been best friends for 8 years and flatmates for 7 years, and the kitchen has been a major space of bonding for us. Bora is a trained pastry chef and the founder of her own social cake shop in Kosovo, and I (Jenny) am the devoted student. During the pandemic, I was suffering from severe eczema so I was on a strict refined sugar free, seed oil free diet. But I wasn't ready to give up cakes. That got Bora and I experimenting. We replaced the sugar and milk in her French and Italian recipes without compromising the taste. Et voilà, Mind the Cake was born in 2024.

Fine taste and good crust however, there is an odd elastic gummy texture to the cheese cake portion which I didn’t expect nor have I ever had.

Bit disappointing

looked great, but the texture of cheesecake felt too solid and a bit plasticky

Small but tasty

Portion size was slightly smaller than I expected, but the flavour was really nice.

The cheesecake doesn't have the same texture that I was expecting either but it felt like a big marshmallow and was tasty

cheesecake looks edible & was certainly a tiny portion (half the size of a table knife) so I’d say the full pice point is too high.
the raspberry compote thin layer on top was not as “tart” s I’d expect from raspberry so it was as described a hint of flavour.
the texture was nice and smooth creamy with the same slight hint of flavour.
For my own tastebuds I’d like & expect a more tang/sharp taste when purchasing/eating raspberries- so for me I wouldn’t buy unless the flavour was more pronounced

Beautiful presentation of the cheesecake, I think more raspberries and raspberry juice are needed on top to taste the raspberry’s , cheesecake well made , but I think needs a raspberry juice in it for more flavour, a few changes here and there and I’m sure it will be absolutely delicious.
