I've lovingly simmered a medley of seasonal veg in a rich, coconut-based sauce, infused with fragrant spices like turmeric, ginger, and a hint of vanilla - a nod to Madagascar's famed crop. The curry's got a lovely warmth to it, not too spicy, mind you, but full of depth. A splash of lime juice adds a zippy brightness, whilst a sprinkle of toasted cashews gives it a proper nice crunch. It's proper hearty and flavoursome, perfect for cosying up with on a chilly evening. Served over fluffy rice, and you've got yourself a right treat!
