Meet Bora & Jenny

Mind the Cake

We have been best friends for 8 years and flatmates for 7 years, and the kitchen has been a major space of bonding for us. Bora is a trained pastry chef and the founder of her own social cake shop in Kosovo, and I (Jenny) am the devoted student. During the pandemic, I was suffering from severe eczema so I was on a strict refined sugar free, seed oil free diet. But I wasn't ready to give up cakes. That got Bora and I experimenting. We replaced the sugar and milk in her French and Italian recipes without compromising the taste. Et voilà, Mind the Cake was born in 2024.

Really love the subtle lemon flavour and chocolate coating. Perfect size for me

This looks lovely and has great texture but as other reviewers have observed, it doesn’t taste of anything much. More lemon flavour would make it perfect.

Tasty. Wasn’t a sweet as expected with the lemon type frosting covering the cake. Enjoyed it

I love lemon cakes, this one is a fine size, it's light, fluffy, creamy and mildly lemony.
Nice covering of white chocolate which makes it even nicer.
Only thing that would make it better would be a thick lemon curd layer or a lemon drizzle because for me it's far too mild.
This would be improved greatly by a stronger lemon taste.
