Nkatse Nkwan (Peanut Butter & Chicken Soup)

My take on Nkatse Nkwan celebrates the rich traditions of Ghanaian cuisine, marrying tender pieces of chicken with a velvety peanut butter broth. I gently simmer the chicken until it's perfectly tender, whilst creating a harmonious base of ginger and garlic. The magic happens when I blend in creamy peanut butter, which transforms the soup into something truly special - rich, smooth, and deeply satisfying. Fresh tomatoes add a natural sweetness and bright notes to balance the nutty depth. Each bowl is a warming embrace of comfort food that I'm proud to share from my kitchen to your table. Whilst it's hearty enough on its own, this soul-warming soup pairs beautifully with rice or traditional fufu.

Meet Maame

Hi, I'm Maame, and I'm originally from Ghana, West Africa. My cooking story started when one afternoon, my Mama Jane asks me to prepare Jollof Rice for the family for supper. “What”?! I had had experience of cooking with her from when I was six years old but had never cooked a whole dish all by myself. I got on with it and the meal turned out great. The compliments from my Mama Jane, who’s a fantastic cook, gave me the boost to carry on cooking.

Odd but nice

Sauce was nice, not a fan of the chicken drumstick, would of prefered if the chicken was off the bone. Still a nice flavour though

Very tasty soup

A whole chicken drumstick in soup. Unfamiliar flavour combination, however having tried it, I now think chicken and peanut butter go really well together. Would have preferred it packed in a flat container rather than a pot.

OK

Not sure about this. I enjoyed the flavours but something not right about the texture. Felt a bit muddy. Maybe too much of the texture of peanut butter and not enough of the flavour?

Flavoursome

Really enjoyed this served with some crusty bread. A little strange with chicken drumstick although overview describes ‘tender pieces of chicken’

Delicious

Came with a chicken drumstick on the bone - would be good to actually call this out in the description. Personally I would much prefer off the bone.
Also as other reviewers say, more salt is needed.
Taste was good once salt was added although unsure I would order again
