My Nkakra is a beloved Ghanaian recipe that I've carefully crafted to bring out the essence of home-style cooking. I start by slowly simmering tender pieces of chicken in a light yet flavourful broth, whilst fresh tomatoes melt away to create a naturally sweet and vibrant base. The magic lies in the delicate balance of aromatics - fresh ginger and garlic gently infuse the broth, giving it a subtle warmth that complements the chicken perfectly. Each spoonful delivers that comforting, homemade taste that makes this soup so special. Whilst wonderfully satisfying on its own, I love serving this heartwarming bowl with a side of rice to soak up every last drop of the fragrant broth.

Meet Maame

Hi, I'm Maame, and I'm originally from Ghana, West Africa. My cooking story started when one afternoon, my Mama Jane asks me to prepare Jollof Rice for the family for supper. “What”?! I had had experience of cooking with her from when I was six years old but had never cooked a whole dish all by myself. I got on with it and the meal turned out great. The compliments from my Mama Jane, who’s a fantastic cook, gave me the boost to carry on cooking.

Tender chicken leg, in a tasty tomato soup, with a few Brussel sprouts. Really tasty and warming.

Very tasty soup

A whole chicken drumstick and a few brussels sprouts in a gently spiced tomato soup. Lovely supper on a cold evening!

Not a fan of the drumstick (or meat on the bone in general) - but the actual chicken tasted good and was tender. Soup was rich and thick and tasted lovely. Would order again if meat was off the bone

Rich, velvety soup

This is a rich velvety soup with a great tang from the tomatoes and a rich umami aftertaste. The whole sprouts were a nice surprise. The chicken drumstick was well cooked with soft tender meat, but personally I prefer bitesize meat off the bone in a soup for ease of eating. There was also the issue that the whole drumstick took a lot longer to heat up fully than the soup did. However, all told it was delicious. Replace the drumstick with pieces of chicken and I'd very happily eat it again!
