Tarte Tatin

A heavenly dessert of dark and sticky sweet caramel apples and crisp puff pastry that you just can't get enough of. The apples give it a little zing so it's not overwhelmingly sweet. This is a French classic and one of my dishes that continuously sold out when I cooked this for HomeCooks during lockdown.
Tip: Delicious eaten solo or with a dollop of creme fraiche

Meet Lisa

My Mum was an amazing chef and taught me how to cook. My food story began when I was a songwriter, our studios were in a remote part of Kent with nowhere to buy food so I cooked for everyone. After 20 years of writing pop songs I decided I wanted a career in food and I was offered a chef role at Jamie Oliver's cook school but decided to set up my own at home. My business grew into recipe developing and writing articles for local London newspapers.

Too sugary for my taste

Disappointed with the flavour and texture. No apple flavour and just too much sugar for me.

Very nice but the only criticism I would make is that a tarte tatin is meant to have crispy pastry but the tart I had the pastry had a “soggy bottom” and was drenched with sugary juice. Not sure how this could be improved after freezing and thawing but it’d be nice if there was a way of crisping up the pastry…

Quite expensive as a whole pie, however it gave me four servings over 3 days! My only criticism was that the puff pastry was completely soggy and not crisp as it should be. Not sure how this would be avoided with a product that is frozen and thawed but even cooking in oven did not crisp it up again.
