Roast Chicken with Potatoes and Vegetables

My roast chicken & potato with vegetables is a timeless Sunday dinner brought to life with care. I season the chicken to enhance its natural flavour, roasting it until the skin turns golden and crisp while the meat remains succulent inside. The potatoes are perfectly crisp on the outside and fluffy within, having absorbed all those wonderful chicken juices. I complete the dish with seasonal vegetables, simply prepared to bring colour and freshness to the plate. It's honest, comforting food that celebrates proper British cooking at its best.

Meet Lisa

My Mum was an amazing chef and taught me how to cook. My food story began when I was a songwriter, our studios were in a remote part of Kent with nowhere to buy food so I cooked for everyone. After 20 years of writing pop songs I decided I wanted a career in food and I was offered a chef role at Jamie Oliver's cook school but decided to set up my own at home. My business grew into recipe developing and writing articles for local London newspapers.

Lovely dish!

Really enjoyed this. I thought the portion was spot on, the chicken was lovely and the potatoes and veg came out of the microwave perfectly

Tasty chicken dinner

I really enjoyed this meal. The sauce on the chicken was lovely, sauteed vegetables and crispy but soft inside potatoes.

Nice dish

I enjoyed this dish. Chicken was very juicy and tender. It's difficult to transfer to the oven when it's frozen though so I had to use the microwave, which took the crisp away from the potato.

Pleasant roast dinner

The chicken was very tender, and the potatoes were crunchyish on the outside with a very soft, fluffy interior (I chose to heat this in the oven, not the microwave). The veg also kept a pleasant al dente texture. The dish overall could use slightly stronger seasoning for my taste, but in general very pleasant.
