Malaysian Peanut Chicken Curry

This dish has been developed from my sell out Malaysian chicken and peanut sauce dish in the HomeCooks Facebook days. The chicken is marinaded and cooked in a delicious peanut sauce with peppers, onions, coconut milk, ginger spices and tomatoes. It’s a delicious lightly spiced curry that is both sweet and zingy.

Tip: Add plain rice or try my new cauliflower rice and a portion of trio of greens. When reheating the curry you may need to add a little water to rehydrate.

Meet Lisa

My Mum was an amazing chef and taught me how to cook. My food story began when I was a songwriter, our studios were in a remote part of Kent with nowhere to buy food so I cooked for everyone. After 20 years of writing pop songs I decided I wanted a career in food and I was offered a chef role at Jamie Oliver's cook school but decided to set up my own at home. My business grew into recipe developing and writing articles for local London newspapers.

This was absolutely delicious! So much flavour. It did need rice to adding to it to make it a complete filling meal but I really enjoyed it will definitely be ordering it again. It smelt so good heating up and I couldn’t work out which meal my carer had chosen from the freezer that smelt so amazing and was tempting my appetite having not really been wanting anything beforehand- and the taste was even better!

Great balance of flavours

This is WAY better than the equivalent from most take aways. I liked the flavour combos but thought the portion size was a little small, with a lot of rice (I can always pad out with rice at home!)
