Jerk Pork

Traditional jerk done the way you like it! I started by marinating pork belly in a jerk seasoning and then slowing cooking so all the flavours have a chance to mingle. This results in tender, mouthwatering pork with a fiery kick that transport you to Jamaica. Served with our homemade rice and peas.

I started cooking at the age of 9 when my mother didn't come home early enough one day and my brothers really needed to eat. I cooked tinned mackerel in tomato sauce and plain boiled rice - even my stepdad had it. I've worked in several restaurants over the years, this helped me to develop my skills. My husband saw my passion and found a place where we opened our first Caribbean restaurant. It's been 10 years and I still love it!

Yum - love this jerk dish!

I love these Jerk dishes, so moreish and good portion size. A regular makes one large meal, or two smaller ones just fine. Will order again :)

Very Fatty

Whilst I understand that the recipe uses belly pork which is a fatty cut, my serving had rather too much solid thick fat chunks which wasn’t very pleasant. Think I prefer and will stick with the Jerk Chicken. The air fryer reheating instructions weren’t optimal either, not being hot enough at 160C / 10 mins yet this more than dried out the garden peas.
