Meet Bora & Jenny

Mind the Cake

We have been best friends for 8 years and flatmates for 7 years, and the kitchen has been a major space of bonding for us. Bora is a trained pastry chef and the founder of her own social cake shop in Kosovo, and I (Jenny) am the devoted student. During the pandemic, I was suffering from severe eczema so I was on a strict refined sugar free, seed oil free diet. But I wasn't ready to give up cakes. That got Bora and I experimenting. We replaced the sugar and milk in her French and Italian recipes without compromising the taste. Et voilà, Mind the Cake was born in 2024.

Very enjoyable dessert! Having had this twice now, my only minor complaint is that half of it ends up on the lid & the base also sticks to the bottom of the container! Don't know if anything can be done about that?

I don’t know what I was expecting but this a surprise and it was very delicious! I’m glad I ordered it. Was a lovey creamy treat to have on hand which wasn’t too heavy. I’ll definately order this again

Bliss is the right word

Well what can I say! If you like coconut then you will LOVE this. It's such a treat.

Misleading name as there is only 1

It was overall a good desert but base was a little dry.

My Review

Very special and unique appearance, vegan cream but it has egg in it, so I won’t be able to ratites again, I hope they find a way to make it totally vegan, good portion size and filling also.
