Chicken Mole

For our mole with chicken, we start by marinating tender chicken in a carefully selected blend of spices to bring out its flavour and keep it succulent. Meanwhile, we prepare the mole sauce by slow-cooking a rich mix of toasted chillies, warm spices, and just a hint of chocolate. As it simmers, the flavours deepen, coming together into a beautifully smooth and velvety sauce. Once the chicken is perfectly marinated, we add it to the mole, letting it soak up all those deep, complex flavours. Served with fragrant Mexican rice and roasted vegetables, this dish is bold, hearty, and full of character.

Never had anything like this before and I loved it!! And I’ll be ordering this again.

Delicious!

I've been lucky enough to travel to Mexico a few times and one thing that always seemed to blow me away was the delicious and flavoured cuisine. Living in the UK I had never really seemed to be able to find those delicate flavours executed well in a dish, in all fairness the balance between sweet and savoury is a hard balance to master especially in a cuisine as intricate as the Mexican one. Nonetheless this Chicken Mole has certainly mastered that for me, the balance between the spicy sauce is very well balanced with the rice overall the flavours combine to make a delicious dish one which I am to become a regular buyer of and one which I would highly recommend.

Loved it

I had the beef and pork mole previously and loved it so ordered the chicken this time. Almost as good but be careful not to make it too hot so other flavours aren't lost.

Really liked this dish, but preferred the Beef Mole over this one.
