Tofu Thai Green Curry with Jasmine Rice (VG)

This recipe was passed down to me from my mother and it's a very traditional version. My homemade green curry paste, mixed with coconut milk, tofu, aubergine, bamboo shoots and bell pepper creates a very rich aromatic curry which I'm sure you will love. I pair it with fluffy jasmine rice. It is very popular at my street food stall at Petticoat Lane Market.

Even better than before

The last time I ordered there was too much rice vs sauce - this time it was perfect. Highly recommended!

As juicy and delicious as a good steak

Have never tasted such good tofu, as juicy and delicious as a steak (tho I haven't eaten any steakin years, but that's how I remember them! ) But forget the steaks, this dish had perhaps the world's best tofu!

Only small quibble was the that sauce seemed to cook down to a rather gloopy sauce which was not enough to balance off the rice provided with the dish. (And I did follow the instructions to a T!) But the tofu was so succulent that I am still giving this dish 5 stars.
