Smoky Chipotle & Dried‑Plum Pork

One of our favourites in our coffee shop in Mexico. The pork loin is seasoned for 24 hours with salt, onion, garlic, and orange juice, then roasted for 2–3 hours with dried-plums and smoky chipotle sauce. It’s a delicate, beautifully balanced dish. We paired it with green spaghetti and vegetables.
