Slow Cooked Mexican Brisket with Corn

My slow cooked Mexican brisket is a real labour of love, I tell you. I start with a beautiful cut of brisket, rubbed with a blend of smoky chipotle, earthy cumin, and a touch of cinnamon - gives it a proper Mexican twist. Then, I let it slow-cook for hours until it's so tender it just falls apart with a fork. The juices from the meat mingle with fire-roasted tomatoes, creating this rich, complex sauce that's to die for. I serve it with sweet corn kernels that I've charred just a bit for that authentic street food flavour. It's all topped off with a sprinkle of fresh coriander and a squeeze of lime to brighten things up. One bite and you'll feel like you're sat in a little cantina in Mexico City, I promise you that!

Very Tasty

Used this as a basis of a Sunday lunch (see photo); it was very tasty and tender and I like the inclusion of corn. If I had a criticism at all I found it a little too sweet for my tastes but I would likely buy it again
