Slow Cooked Mexican Brisket with Corn

My slow cooked Mexican brisket is a real labour of love, I tell you. I start with a beautiful cut of brisket, rubbed with a blend of smoky chipotle, earthy cumin, and a touch of cinnamon - gives it a proper Mexican twist. Then, I let it slow-cook for hours until it's so tender it just falls apart with a fork. The juices from the meat mingle with fire-roasted tomatoes, creating this rich, complex sauce that's to die for. I serve it with sweet corn kernels that I've charred just a bit for that authentic street food flavour. It's all topped off with a sprinkle of fresh coriander and a squeeze of lime to brighten things up. One bite and you'll feel like you're sat in a little cantina in Mexico City, I promise you that!

Meet Lucia

With a Mexican mom and Italian dad, I spent a lot of time in each country during my childhood so I developed an appreciation for Mexican and Italian cuisines. Cooking is my true passion, and I find joy in playing with food at the intersection of Mexican and Italian tastes. I love receiving heartfelt comments about my meals and knowing that I've contributed to brightening someone's day, even with just a little bite.

Tasty dish

Plenty of meat in this dish! Dense and chewy, even with the corn mixed in, so I added some shredded iceberg lettuce to lighten the texture.

This was a lovely treat- I have a legume intolerance so don’t often find Mexican food I can eat. I paired mine with some wraps, salsa and cheese and it was such a filling hearty meal. It has a gentle spice and full of flavour. The brisket beautifully tender. Very generous portion too

One of the. best dishes I’ve tried on Homecooks

Rich and tasty, good quality meat with very little fat. Really good sized portion of brisket (200g) so could split between 2 if you added rice and refried beans etc. Corn tender and went well with the beef.
