Caribbean Chicken Curry

My Caribbean Chicken Curry is a proper taste of sunshine, even on the greyest of days. I start with tender chunks of chicken thigh, marinated in a blend of island spices - think allspice, thyme, and a touch of scotch bonnet for a bit of heat. Then, I simmer it all in a rich coconut milk sauce, with a good glug of rum for depth. Sweet potato and bell peppers add a lovely bit of colour and texture. The secret, though, is a handful of juicy mangoes that go in near the end - they bring a tropical sweetness that balances the spice just right. It's all served over rice and peas, naturally. One bite and you'll feel like you're on holiday in the Caribbean, I reckon. It's proper tasty, this one! Spicy 🌶🌶
