My Caribbean Chicken Curry is a proper taste of sunshine, even on the greyest of days. I start with tender chunks of chicken thigh, marinated in a blend of island spices - think allspice, thyme, and a touch of scotch bonnet for a bit of heat. Then, I simmer it all in a rich coconut milk sauce, with a good glug of rum for depth. Sweet potato and bell peppers add a lovely bit of colour and texture. The secret, though, is a handful of juicy mangoes that go in near the end - they bring a tropical sweetness that balances the spice just right. It's all served over rice and peas, naturally. One bite and you'll feel like you're on holiday in the Caribbean, I reckon. It's proper tasty, this one! Spicy 🌶🌶

FireBirds Woodfire BBQ Chicken

I was born in Sierra Leone (West Africa) but grew up in the U.K. My mum is a chef, and my dad taught me how to season and cook meat. I create meals by fusing ingredients from Africa, the Caribbean, and southern America to create unique meals busting with vibrant fresh ingredients and high-quality perfectly cooked meat. I put my own twist on popular traditional meals from each region to give customers a full food tour of Afro-fusion cuisine.

Love this chicken curry

Full of authentic flavour. Very pleased with this dish and have since ordered again.

Strong, flavourful but not my fave

Hard to submit an objective review for this dish as I actually didn't love the strength of the curry - but I love the chef and have liked all of his other dishes. If you're on not the fence about curry, you'll probably love it - the chicken (like always) was beautifully cooked.

Loved this. Its so nice to have something a bit different that I wouldn't know how to cook myself. The chicken was sliced and cooked lovely, potatoes were fab and the sauce was the perfect consistency and spice level. A little tingle but not overwhelming. We microwaved it initially from from frozen and finished it in oven. Fab! Always love chefs presentations in the containers, too, the care put into it doesn't go unnoticed!
