For our mole with beef and pork, we start by marinating the meats in a carefully chosen blend of spices to enhance their flavour and tenderness. Meanwhile, we craft the mole sauce by slow-cooking a rich mix of toasted chillies, warm spices, and a hint of chocolate. As it simmers, the flavours deepen and fuse into a smooth, velvety sauce. Once the beef and pork are perfectly marinated, we add them to the mole, letting them soak up its deep, complex warmth. Served with fragrant Mexican rice and roasted vegetables, this dish is bold, hearty, and packed with flavour.

❄️ FROM CHILLED

MICROWAVE: Remove sleeve and pierce film. Heat on full power at 850W. Heat for 4 mins. Leave to stand for 2 minutes. Stir well before serving.

OVEN: Preheat oven to Fan 180 ºC / Electric 200 ºC / Gas 6. Remove outer sleeve and pierce film. Place on a baking tray and position in the centre of the oven. Cook for 30 - 35 mins. Leave to stand for 2 minutes before and stir well before serving.

It was my first time trying a Mexican Mole, and I was blown away. The flavours were delicious with a very good combination of sweet and spicy. I can't recommend this dish enough, even my kids who can often be picky eaters seemed to love the dish.
