I was born in Sierra Leone (West Africa) but grew up in the U.K. My mum is a chef, and my dad taught me how to season and cook meat. I create meals by fusing ingredients from Africa, the Caribbean, and southern America to create unique meals busting with vibrant fresh ingredients and high-quality perfectly cooked meat. I put my own twist on popular traditional meals from each region to give customers a full food tour of Afro-fusion cuisine.

I'd never come across the idea of Afro-Fusion before. But what a good idea -- I loved the layers and layers of flavour complexity in this dish (tho it might be too fiery for some) and the lamb was tasty and tender and the potatoes nice and crispy. Tracy U.

What is your favourite dish to eat and why?

Fusion curried lamb with roasted spiced potatoes and fresh veg. I love this dish because I created it from scratch; the lamb is tender and moist, the spiced potatoes are fluffy and well seasoned, and the curry sauce brings the dish together while the vegetables bring freshness to the dish.

What is your favourite dish to cook and why?

The fusion mac and cheese with pulled beef. This dish is a taste sensation; the unique blend of cheeses and seasonings combined with the melt-in-the-mouth beef in a rich sauce is the perfect taste experience.

What is your proudest cooking memory?

Catering my first event for 100 people, the feedback and reviews were all excellent.
