Mai Dim Sum

My prior experience working with the then Global Executive Head Chef of Hakkasan Group allowed me to understand how well educated the customers in the West were on Chinese food and in particular, Dim Sum. The limited availability of specialist dim sum offerings gave me the idea to launch Mai Dim Sum. The rest is history...

What is your favourite dish to eat and why?

My favourite dish and it appears to be our customers' favourite dish, is the Prawn and Bamboo Har Gau. They are generously packed with prawn so each mouthful shows off the prawn as we want it to be.

What is your favourite dish to cook and why?

Dumplings are a popular and traditional dish during the Chinese New Year season, and it is also a fun and delicious appetiser, dinner food and snack to enjoy at any time of year and at any time of the day.

What is your proudest cooking memory?

Making dumplings involves team work. When i was a child, the whole family would always sit around the table and make dumplings together. My proudest moment was taking the lead for the first time and producing delicious dumplings for everyone to share.
