Alessandro's dishes...

I'm originally from the Amalfi Coast in Italy, where I grew up watching my grandmas knead pasta and hearing the rhythmic sound of pasta rolling through the pasta machine. Making pasta is the way I stay connected to my roots whilst I have been living in Manchester for the last 6 years. Apart from being a private chef, I also run workshops to share my grandmas' teachings with as many people as possible.

My speciality is Authentic Italian Pasta

What is your favourite dish to eat and why?

I love to eat 'tagliatelle al ragu'. This dish holds a special place in my heart because of the perfect harmony between fresh, homemade pasta and a rich, slow-cooked meat sauce.

What is your favourite dish to cook and why?

I love to make Tortelloni as it's both an art and a labour of love. Its shape, inspired by Venus' navel, resembles a 'belly button' and requires precision and skill. I love to get the time to spend perfecting my technique.

What is your proudest cooking memory?

Whenever I go back and I get to cook for my grandma and she says it tastes just like her cooking.
