Veggie Kofta with Basmati Rice

Let me tell you about these little kofta balls first. We take a bunch of fresh veggies – potatoes, carrots, peas, spinach, you name it – and mix them all up with some yummy spices and chickpea flour. Then we roll them into little bite-sized balls.
Once those koftas are formed, we let them simmer in a rich tomato-based curry sauce. This sauce packs a punch of flavour with warm spices like cumin, coriander, and a little kick from some chilies. As the koftas cook in that sauce, they soak up all those delicious flavours.
But we can't forget about the basmati rice! That's the perfect side to soak up any extra sauce. We make sure to cook those rice grains just right so they're light and fluffy.
