This dish showcases the earthy and rustic flavours of wild mushrooms. To draw out the mushroom's umami notes, I added an essence of black truffles by infusing them in a creamy butter sauce. Serve with a sprinkling of parmesan and some garlic bread.

Meet Alessandro

I'm originally from the Amalfi Coast in Italy, where I grew up watching my grandmas knead pasta and hearing the rhythmic sound of pasta rolling through the pasta machine. Making pasta is the way I stay connected to my roots whilst I have been living in Manchester for the last 6 years. Apart from being a private chef, I also run workshops to share my grandmas teachings with as many people as possible.
