Vegetarian Moussaka

This is the vegetarian version of the comforting Greek classic. It's made up of layered seasoned mixed vegetables, eggplant, and a creamy béchamel sauce. The sauce is cooked with tomatoes, onions, garlic and various spices. Then, the sliced eggplant is sautéed and layered in a baking dish. Finally, a velvety béchamel is poured over the top and sent off to bake until the eggplant is tender and the sauce is hot and bubbly.
