Traditional Chicken Korma

Korma originates from the Indian subcontinent and has ties to the north as well as the south of the country. My tried and tested recipe brings this traditionally braised chicken dish with a rich sauce of almonds from the north, together, with the slightly sweet and creamy taste of coconut from the coastal regions of the south. Fresh, aromatic and gentle spices are added from the beginning of the slow braise, packing this curry with flavour rather than heat. It’s now one of my family's favourites.
