This dish is inspired by the cooler days of Autum in the Almafi Coast. The filling of pumpkin and creamy ricotta creates a luxurious and velvety texture that is stuffed into the handmade tortelloni. To take it to the next level, the sage-infused butter rounds out the earthy flavours and deliver the perfect pasta dish for the cooler days. Serve with a sprinkling of parmesan and some homemade garlic bread.

Meet Alessandro

I'm originally from the Amalfi Coast in Italy, where I grew up watching my grandmas knead pasta and hearing the rhythmic sound of pasta rolling through the pasta machine. Making pasta is the way I stay connected to my roots whilst I have been living in Manchester for the last 6 years. Apart from being a private chef, I also run workshops to share my grandmas teachings with as many people as possible.
