Feta & Spinach Filo Pastry

The filling is made by wilting down spinach and mixing it with crumbled feta. Then after rolling the sheets of filo with the filling into triangles, they are baked until golden brown. The combination of the crisp, flaky filo and the warm, hearty spinach and savoury feta makes for a delicious traditional pastry.

These are a regular for me, great as a snack. They cook well in the oven, I tried to microwave them but I wouldn't recommend it.
