Cauliflower Korma

This vegan, gluten free and protein packed Cauliflower Korma Mejadra is flavour packed and wholesome. The rice side is the just as much the star as the Korma, with its rice and lentils perfumed with cumin, cinnamon and all spice.

Korma originates from the Indian subcontinent and has ties to the north as well as the south of the country. My tried and tested recipe brings this traditionally dish with a rich sauce of almonds from the north, together, with the slightly sweet and creamy taste of coconut from the coastal regions of the south. Fresh, aromatic and gentle spices are added from the beginning of the cook packing this curry with flavour rather than heat. It’s now one of my families favourites.

Serve with a sprinkling of freshly chopped coriander and some toasted almonds for a perfect finish.
