Aubergine & Tofu Stew

This is my favourite vegan dish we do. It's simple, sweet and very creamy. We cook the aubergine and tofu in coconut milk sauce, and then we add lemongrass and a bit of chilli to round out the flavours and aromas. Served over simple white rice.
